I spent my Friday evening with two sweet friends of mine. We chowed down on mexi and stuffed our faces with brownies. I may be speaking of myself when I say 'chowed' and 'stuffed'. ;) Up early Saturday I did my guest post and then hit the gym for step class. It was an intense class with some new moves! Great workout. After the gym I met up with mom and took her shopping. I know..I am the best daughter. ;) I was her personal shopper! I love mom/daughter dates.
After shopping we went back to moms and spent the rest of the night lounging around in my fave VS yoga pants and my cute Goodwill cheetah slippers!

After church went to the Olive Garden to meet up with our old Community Group from church. Such a fun lunch. I miss seeing those smiling faces every week!
After lunch I picked up my son and we headed to grandma's for the day. He had the best time playing with grandpa!

While they were being crazy men mom and I...well this time I can truly say I did most of it...made cookies from scratch! It's no secret that I love to bake, but these cookies had tons of ingredients! Usually I stay away from the recipes with so many ingredients. I'm glad I didn't though..these were worth every extra second!
Raisin White Chocolate Chip Pumpkin Oatmeal Cookies
Ingredients:
2 cups all purpose flour
1 ½ cups old-fashioned oats
1 teaspoon baking soda
1 ½ teaspoon ground cinnamon
1 teaspoon pumpkin pie spice
½ teaspoon kosher salt
1 cup (2 sticks) butter; softened
1 cup packed light brown sugar
1 cup granulated sugar
1 cup pure pumpkin puree
1 large egg
1 teaspoon vanilla extract
1 cup white chocolate chips
1 cup raisins
Directions:
1. Preheat oven to 350 degrees F. Line your baking sheet with a silicone mat or parchment paper.
2. Combine flour, oats, baking soda, cinnamon, pumpkin pie spice and salt in medium bowl. Beat butter, brown sugar and granulated sugar in large mixer bowl until light and fluffy.
3. Add pumpkin, egg and vanilla extract; mix well. Add flour mixture; combine until all ingredients are incorporated. Fold in white chocolate chips and dried cherries.
4. Drop by rounded tablespoons onto prepared baking sheets.
5. Bake for 12-14 minutes or until cookies are lightly browned. Cool on baking sheets for 2 minutes; remove to wire racks to cool completely.
