Insanity Dinner Omelet
Mexican Whole Wheat Pasta
Chicken Fajita Tacos

I'm Loving Insanity! Today I started week two and I can already tell I'm getting stronger and faster with the workouts, now that I'm repeating the DVDs.
Before Insanity: I'm scared
During: Beast Mode!
After: Like crossing a finish line.
That phrase, 'Get Fit or Get Out', pushes me so hard. Shaun T is so motivating!
I'm Loving the Insanity meals that Shaun T has put me on. They're delicious!
Insanity Dinner Omelet
Ingredients:
2 egg whites & 1 whole egg
1 cup baby spinach
1/4 cup feta cheese
1 piece whole wheat toast
Directions:
1. Cook the eggs and combine the spinach and feta to create an omelet.
2. Serve with/on a piece of whole wheat toast.
I don't like to use the packets of taco, fajita, burrito seasonings because they are FULL of sodium, calories, unnecessary carbs, etc. So instead I always make up my own little concauction!
These are staples in my spice cabinet:
-Garlic Powder
-Basil
-Dried Cilantro
{I found mine at the local Mennonites store}
-Chili Powder
-Crushed Red Pepper
-Ground Cumin
For Mexican Dishes I always add: Garlic powder, crushed red pepper {if I want to add a kick to it!} dried cilantro, chili powder, ground cumin.
For Italian Dishes I add: Garlic Powder & Basil.
Whenever I know I'm going to be making a dish or two... or three ;) of Mexican for the week I always open a can of black beans {drain and rinse them} and a can of mexican. I mix them up in a bowl and keep them in the fridge for easy use to add to any meal!
Mexican Whole Wheat Pasta
Ingredients:
Whole wheat pasta
Black beans & mexicorn
Ground beef
Green pepper {chopped}
1 cup Salsa
Directions:
1. Boil the noodles.
2. Brown & rise the ground beef
3. Saute the peppers in with the ground beef. Add desired seasons and salsa.
4. Layer on plate: Pasta, meat mixture, black beans, and corn.
Ingredients:
3 chicken breasts
1 red pepper
Black beans
Mexicorn
Baby spinach
1 cup salsa
Directions:
1. In a skillet add olive oil and cook red pepper strips and chicken
2. Add 1/2 cup water and mexican seasonings and simmer for 5 minutes
3. Layer on a wrap: salsa, chicken & peppers, spinach, black beans, and corn

oh.my.word. those chicken fajitas look amazing! Thanks for the recipe. I will definitely make those soon. I attempted fajitas last night and I ended up making quesadillas instead!
