This Wednesday I'm loving...

Our new dinning room table that my husband got on black Friday. He knows how to shop!

Here is it in our dinning room! This is only with 4 chairs. There are 4 more, just not put up yet in this picture.

I'm loving my sweet boy. Here he is pooped after spending time with grandpa :)

I'm loving my two new recipes!

PB&J Muffins


Ingredients:
2 cups all purpose flour
1 1/2 tsp salt
1 tbsp baking powder
1 cup milk
2 large eggs
2/3 cup sugar
1 cup peanut butter
1/3 cup vegetable oil
1/2 cup preserves or jelly
1/4 cup sugar

Directions:
1. Preheat oven to 375. Spray muffin pay with no-stick cooking spray.
2. Stir together flour, salt, baking powder in a large bowl.
3. Add milk, eggs, 2/3 cup sugar, peanut butter, and oil to bowl. Combine ingredients on low speed of electric mixer, just until moistened.
4. Fill prepared muffin cups evenly with half of the batter.
5. Place 2 level teaspoons of preserves in the center of each muffin. Evenly divide remaining batter between muffin cups.
6. Sprinkle with 1/4 cup sugar.
7. Bake 18-20 minutes.



Light and Lean Rotini and Beef


Ingredients:
1 box wheat rotini
1 lb. ground beef
1 jar light spaghetti sauce
1/2 can rotel
1/2 can black olives, chopped
1/2 onion, chopped
1/2 green pepper, chopped
1 tsp basil

Directions:
1. Brown the ground beef, drain
2. Saute in onions and green peppers then add spaghetti sauce, black olives, and rotel
3. Boil the rotini, drain, and stir into mixture
4. Pour mixture into casserole dish and bake for 15 minutes


I'm loving that at work today we sponsored the $2.00 lunch today at the BCM {Baptist College Ministry} at Austin Peay!
We all got together and made stuff for a Chili Meal!
This is a great idea for any big party idea. We only needed a few things!
Chili, Fritos, Cornbread, Sour Cream, Cheese, and of course Desserts!
Cookie Cake? Oh yeah, off the chain.


Something that I'm not loving this Wednesday is my gimpy foot :( I went to the doctor Monday and I have tendinitis in my left foot. Bummer. Isn't stopping me from going to the gym though! Went last night and did arms and abs and today when I get off I plan on going to swim some laps. Dying to get some cardio time in. I am not the type of person that can just get off work and go home and sit on the couch. No. Way.

  1. Thank goodness you finally posted! I think all of the blogs I read went on vaca. Lol imglad I read this it just reminded me to ask my mom about her foot, I'll text you when I find out. Hopefully it gets better soon, I know how it is bein a cardio junky I use to be one till I went to college :-/ hehe...
