What I'm Loving Wednesday!

25 January 2012

It's Wednesday and I'm linking up with Jamie for

This Wednesday I'm loving...

My sweet boy.
Talk about a momma's boy!

'Mom, don't go to work...come up here and we can play!'

The hubs new truck.
I know, I know...it isn't a Ford, Lincoln, or Honda. {FYI-I work here.} But, he did buy it from us! I've been driving it the past couple of days getting some last minute things done to it and it is a beast compared to my Accord. It was exactly what he was looking for. Bye bye Land Rover A.K.A. Safari Mobile. Helloooo truck! Everyday, since the day we met, he has told me he wanted a lifted truck. I'm not exaggerating. Ok, a little. Anyways, this one was slightly lifted with after market rims and tires. 4 door for our boy and when, one day, we have one of those beautiful bouncing screaming babies! Now, all I have to say is, let's go campin!

I'm lovin' my hair. Got it did last night.
Went almost 2 shades darker + kept my peek-a-boos. BAM!

This amazing dish I made a few nights ago.

Beef Enchilada Bake

Ingredients:
1lb ground beef
1 cup velveeta cheese
1 can cream of chicken
6 corn tortillas
1 can rotel

Directions:
1. Brown the ground beef, drain.
2. Stir in velveeta and cream of chicken.
3. Spoon 1/2 meat mixture in bottom of baking dish. Cover with 6 tortilla halves and 1/2 of rotel.
4. Repeat layers.
5. Bake at 350 for 20-25 minutes.

YUUUUUM!

I'm loving that I threw in Chicken Taco Chili in the crock pot for tonight!
{Will post recipe tomorrow}
P.S. This one is healthy!

I'm LOVING all this Kashi stuff I keep getting! Love, love, love. Organic and healthy and so yummy!

I recently fell in love with Lauren Conrad's Blog/Website.
Check it out and you will see why.
I read recently on there about why lemon and water is so good for you. I know water is good for you, I try to drink 1 gallon a day. Last time I went to Kroger I got some organic lemons and today I sliced them and threw a few in.
Not only am I gaining the pro's it's also pretty tasty.

I'm loving Jelly Belly, Jelly Beans. Adios gummy bears, I have found a new love!
Gummy bears, sorry we are breaking up. I know you are healthier {ha} then jelly beans, but seriously...they are so much better. And, have you tried all the flavors? I think my favorite thing is eating one and trying to figure out what flavor it is.
CONFESSION: I have eaten almost a whole bag in 4 days. & I'm not running? Hello, love handles. Nice to see you again.

Speaking of fitness...

I haven't been in the gym since...the 5th of January. I am going absolutely insane. Please pray for my husband. Even I feel sorry he has to live with me right now. I have no way of releasing any stress so I am a basket case. If it wasn't for the time I get at work to rant, rave, and vent with my Fran...I'm would probably be in one of those rooms with the padded walls.

I am currently planning my training schedule for the Music City Half Marathon. I am beyond excited. My schedule includes lifting, running, other cardio, and food. My foot Dr. apt is Feb 7th. Clock, get moving! I am DYING to hit the pavement or even the pool for a few laps! WAH!

I've had a few people ask me about what to do to lose weight and what kind of diet is ideal. Bare with me friends! I promise I am working on it and will post soon!!! :)

Happy Wednesday!

What are you loving this Wednesday? Link up!
