It's Monday already?! Not complaining though, because it's one Monday closer to moving into our new house!
This weekend was packed with lots of cooking, new recipes, packing, and measuring!
Reason number 4654871 I love my job...
Friday when I got home from work I tried out some idea I've pinned on my Nail board. It's definitely harder then they make it look...
So, that's why I ended up with this 'abstract art' nail. Oh well, practice makes perfect-right?
For dinner Friday night I cooked Grilled Chicken & Broccoli Whole Wheat Rotini Alfredo Noodles.
Ingredients:
1 jar alfredo
3 chicken breasts
1/2 box rotini noodles
1 head of broccoli {chopped}
splash of milk
Directions:
1. Grill/bake/boil chicken breasts and cube.
2. Boil noodles and drain
4. Stir together noodles, milk, broccoli, and alfredo all in a pan and let it warm 5 minutes
6. Scoop pasta on plate and top with chicken
We rented the movie, Man On A Ledge and watched that Friday night. That movie was pretty good! I highly recommend it!
While packing... we found where all of Jaxon's balls have been...
Under the bed.
Saturday morning we slept till 8! Woo! That's kinda late for us.
We got up and made some Whole Wheat Pancakes and went over our bible study.
Good times in the morning. :)
After breakfast we headed to the gym. He lifted and I swam. I swam 80 laps in 42 minutes. I was 40 laps down at 19 minutes. Haulin butt! It was an incredible swim and I totally broke a record. At lap 4 I'm so winded and think, seriously? I'm quitting-but always push through. It was beyond awesome.
Saturday after the gym we cleaned up and headed to do some measuring in our new house-when we pulled up and saw the tiny sign that was attached to the sign my heart stopped, jaw dropped, and eyes lit up! Considering we don't close on the house till the 29th and it's such a long process, I think seeing that sign made everything sit in. So exciting.
One {there's tons} of my favorite things about the house is the stair case. I've always dreamed of having an open stair case with carpet going up the middle and wood on the outside. The iron rails are such a nice touch on it. Now, in say-3 years when we have a screaming baby up there and I'm going up there at 2am... my opinion might be a little different ;)
For dinner we grilled hamburgers and made home made sweet potato fries-they were awesome!
And healthy of course :)
Sunday after church we had a cookout/family picnic/pool party with out community group. Unfortunately the clouds were out instead of the sun and it was kinda chilly... bummer.
But the little kids still had fun in the sprinkler!
The dish we brought was Southwestern Pasta Salad and it was awesome!
Ingredients:
1 box whole wheat rotini
1 can mexicorn
1 can black beans {drained and rinsed}
1 can rotel {drained}
Cilantro {chopped}
2 tbs chili powder
1/3 cup vegetable oil
Directions:
1. Boil the noodles
2. Mix all ingredients together
3. Let sit in the fridge for atleast an hour to cool
Sunday after the cookout was a lazy afternoon!
We rented a Redbox and lounged around.
