I love overnight oats. I was a bit of a skeptic when I first heard of them. Cold.. soggy oats? Gross! But then, I finally had enough common sense to break down and try them. I'm so glad I did! They're one of my go-to breakfast meals! They're great for meal prep and great for an on the go breakfast. Our kiddos love them, too! The best part about them is that they are so versatile and you can have a different flavor every day of the week.
The way to make them is super simple. On Sunday night I pull out 5 mason jars. In each mason jar I add 1/2 cup oats, 1/2 cup unsweetened almond milk, 2 drops of sugar free syrup (I prefer walden farms) and 1/2 tbsp of chia seeds. I screw the lid on and stick them in the freezer. And wah-lah! You're done. They stay good for up to 7 days.
When the morning comes and it's time to eat I always pair my oats with protein. Sometimes a protein shake if I am in a hurry, but most of the time I heat up some egg whites in a pan and have that with it.
My absolute favorite that I've tried thus far...
Banana Nut Overnight Oats:
Add 8-10 walnuts & 1/2 medium banana
Berry Overnight Oats:
Just add some fresh berries.
Add a dash of cinnamon & chop up an apple
