Cookin' fools!

Yesterday after work I came home and went straight for a run with my two boys! We ran 3.09 miles in our neighborhood and was done in 31 minutes. If you have been in my neighborhood you would know that it's pretty good timing considering all the hills we have. The hills were killer, but we didn't stop once and rain straight through ALL of them! Woo hoo!

After the run we got cleaned up and went straight to the kitchen to cook some dinner! We actually made two meals. One for dinner and one for Brandon to just eat on, as you may know...he eats like 6 times a day. Geez!



So, for dinner we cooked Black Bean, Corn, and Turkey Chili.
It was the bomb and tasted like sin, BUT it was actually healthy!

Black Bean, Corn, and Turkey Chili


Ingredients:
1 tablespoon vegetable oil
1 pound ground turkey
1 large onion, chopped
2 tablespoons chili powder
1 teaspoon ground cumin
1/2 teaspoon ground black pepper
1/4 teaspoon garlic powder or 1 clove garlic, minced
1 can chicken broth
1 cup salsa
1 tablespoon sugar
1 can black beans, rinsed and drained
1 can mexicorn, drained

Directions:
1. Heat the oil in a 4-quart saucepan over medium-high heat.
2. Add the turkey, onion, chili powder, cumin, oregano, black pepper and garlic powder.
3. Cook until the turkey is cooked through, stirring often to separate meat.
4. Stir the broth, picante sauce, sugar, beans and corn in the saucepan and heat to a boil.
5. Reduce the heat to low.
5. Cover and cook for 30 minutes, stirring occasionally.

Creamy Mexican Chicken


Ingredients
1/2 cup milk
1 handful grated cheese
1 can cream of chicken
1 pkg of taco seasoning
3-4 chicken breasts

Directions
1. Stir milk, cheese, cream of chicken, and taco seasonings together in a bowl.
2. Trim chicken breasts and cut in half
3. In a casserole dish lay our chicken breasts and cover with mixture.
4. Bake at 375 for 30 minutes.


Here is the concauction I made for Brandon. It doesn't have a name since I just added a bunch of random things together...going to think of something soon though and will get the recipe on the page.

This morning I got up for a morning run with Casey! She's one of those crazies that run marathons and does triathlons. ;) So it's really motivating running along side of her and keeping up! Believe it or not on this cool random Tuesday morning-not meaning to-I beat a goal. Talk about a way to start the morning! We met at the CAC and walked over to the mall and ran the road around it. The total distance is 1.5 miles. Last week I ran it once in about 16 minutes. Today we ran it twice and in 27 minutes. 3 miles, 27 minutes. My best time is the last 5k I ran, which was 3 miles in 32 minutes. Lately I've been worrying about just pacing myself instead of trying to be the hare in the race. The turtle trick is obviously working!

Tonight Brandon and I are taking mom to go see The Help! I can't wait to go see it! I heard that's it's amazing and my girl Emma is the main character! So excited!!! Hope everyone has a great Tuesday night! Two and a half more days and this girl is out for the bday trip! ;)
