Chicken Black Bean & Corn Tacos

Ingredients:

1 can black beans {drained & rinsed}

1 can mexicorn

1 can black olives

1 pkg taco seasoning

3-4 chicken breasts

1 tbs olive oil

cilantro

salsa

whole wheat tortillas

Directions:

1. An hour{ish} before cooking add black beans & corn together in bowl and refrigerate

2. Pour oil in skillet and cook cubed chicken breasts for 3-5 minutes on medium

3. Add taco seasoning and cook according to package

4. Slice black olives & cilantro

5. Layer chicken, black beans & corn, salsa, olives, and cilantro

6. Enjoy!

I'm Loving our country roads...

I'm Loving the run I did this morning! It was awesome. The past week I've been running sprints on the treadmill {insert princess emoticon with gun beside it}. It sucks. Bad. I hate running sprints because it literally drain the life out of me, which = awesome work out! Anyways, it's nice to know that this morning I ran a longer run then normal and it felt great! I wasn't tired, winded... nothing! Love when hard work pays off.
