It's Wednesday! Half way through the week. Yipee!

I'm loving when Brandon visits me at work. Sometimes he likes to change my background. He said that this is him and I. He is so funny, yeah?

Italian Beef & Rice Skillet
Ingredients:
4 slices turkey bacon
1 lb lean ground beef
1 onion {chopped}
1 green pepper {chopped}
2 cloves garlic {chopped}
1/2 tsp salt
2 cups water
1 can {14.5oz} diced tomatoes
1 can {2.25oz} sliced black olives
1 1/2 tsp italian seasonings
2 cups uncooked brown rice
1 cup shredded mozz cheese

Directions:
1. In 12 inch skillet, cook back over medium-high heat until almost crisp.
2. Add beef, onion, bell pepper, garlic & salt; cook 5-7 minutes, stiring frequently; drain.
3. Stir in water, tomatoes, olives, italian seasonings; heat to boiling. Stir in rice.
4. Reduce heat to medium; cover and simmer about 5 minutes or until rice is tender.
5. Sprinkle with cheese, cover, let stand until melted.

This recipe was awesome! It reminded me a lot of the Cajun Turkey Sausage and Chicken Jambalaya I made last week! It was easy, quick, and really good. Too feed more, you can always serve it over chips or in a wrap! Yum, yum. A definite crowd pleaser.


Southwestern Spaghetti Pie
Ingredients:
1 lb lean ground beef
6 oz. wheat spaghetti
1 can mexicorn
1 can black beans {drained & rinsed}
1 cup shredded cheddar cheese
1 1/4 cup salsa
2 eggs
1 tsp cumin

Directions:
1. Cook spaghetti as directed, strain.
2. Preheat over to 350. Brown ground beef, drain.
3. Beat 2 eggs in a bowl, stir in noodles.
4. Stir in salsa, corn, beans, cumin, and 1/2 cup cheese in with beef.
5. In a 9 1/2 inch casserole dish spoon spaghetti mixture into pan, pushing mixture slightly up the sides forming a crust. Spoon beef mixture on top.
6. Bake at 350 for 15 minutes. 
7. Sprinkle 1/2 cup cheese, bake an additional 10 minutes.

This was easy and fun! Like a mexican pie! Quick and easy to whip up. The spaghetti 'crust' was something I had never done or had before and it was really good.


I'm loving that we're EXACTLY one month away from The Hits Deep Tour! Brandon bought our tickets a few weeks ago as a surprise and I'm super pumped. We've got awesome seats!



I'm loving that today is the day I'm finally going to the foot doctor. I was in a boot for 7 weeks the end of last year due to a stress fracture. I've started to have the same pains and have gotten a bone scan & x-ray. I haven't ran in three weeks and my foot feels a lot better, but I'm going absolutely insane. Not running is not the answer. Praying for good news. Join me?
