Last week I posted a few dinners on Insta and had several comments of how to make and what ingredients I used, so I thought I would share! These two recipes are 'light' and delicious!
Spaghetti Squash Chicken Meatballs
Chicken meatballs has become a quick easy favorite in the house. It's very healthy, carb free for dinner, and super easy to throw together! Whether you want to add real pasta to include carbs, eat with just a vegetable side, or have pretend pasta like spaghetti squash.. it's a great go to! Here's the recipe...
Ingredients:
1lb Ground Chicken
1 Egg White
1/2 Cup Bread Crumbs
Seasonings
Directions:
1. In a bowl combine together ingredients (with hands).
2. Pat into balls and place on aluminum foil lined cookie sheet.
3. Bake at 350 for 15-20 minutes
I always throw a little bit of this & that seasonings. Usually a lot of Mrs Dash, just whatever I grab!
For a healthier option of spaghetti sauce I get a can of spaghetti sauce and put, again, whatever seasonings I grab.

'Lightened Up' Cheeseburger Casserole
Although I would love to say that this is one of my 'thrown together awesome recipes', it's not. And that's because it really just tastes that good! Brandon actually cooked this one night last week as I was running around the house knocking out things in our to-do list. I remember walking into the kitchen and smelling the cheeseburger smell. Then when we took our first bite.. oh man! Crazy how much it resembled it. I'm not a tomato fan, so I just picked through the tomato chunks, and we opted out of the the pickles on top. Now, don't freak out when you see the ingredient list! Majority of that is kitchen staples.

Chocolate Chip M&M Cookies
Bennett has been wanting M&M Cookies since we went to Panara like 3 months ago. Have you seen that giant M&M cookie there? Woah. So, I finally found a yummy recipe on Pinterest and decided to make them myself! They definitely didn't turn out 'flat' like the picture. But they were delicious. And they were amazing dipped in milk. Nothing beats a home made cookie with a glass of milk. Gotta get my calcium in for baby! When making this recipe I added the vanilla pudding, but couldn't find mini m&m's or mini chocolate chips so I opted for the regular size! I found this recipe on Pinterest from a blog called; Picky Palate.
I think that a blog post dedicated entirely to recipes is acceptable when you're 25 weeks pregnant. Don't you? ;)
